As far as I can remember, I've had health issues, but people just seemed to think I complained a lot. However, in the spring of 2009, I began getting horrible, persistent migraines that were affecting my studies. I had been to my university health clinic multiple times but I was just diagnosed with a myriad of issues including: migraines, depression, IBS, and acid reflux, all of which they were happy to give me medications for. They eventually gave me Vicodin because my migraines were so bad - but it did nothing. I tried special migraine medications but they only made the migraines worse and gave me dizzy spells and was tested for thyroid problems but everything came back normal.
But on May 4th, 2009 my mom happened to be walking through the kitchen while "The View" was on and Elisabeth Hassleback was talking about symptoms she'd had before she found out she was diagnosed with Celiac's disease. As soon as she finished talking, my mom called me and told me to take gluten out of my diet. Within 72 hrs my migraines were gone.
Even though, I had taken gluten out of my diet I continued to have problems, after reading several forums and looking at health sites, they suggested that casein is often associated with gluten intolerance. And after taking out dairy I begun to feel considerably better. Additionally, I had had an allergy test done a few years back and had the doctor fax it to my parents back home - it turned out that wheat had shown up as positive, along with egg yolks.
Finally, nearly a year into being gluten, casein, and egg yolk free I started getting horrible chest pains, headaches, nausea, the whole nine yards all over again. But I had no idea what was causing all of my problems - I was being good with the foods I ate. After comparing ingredients it turned out the common ingredient in all of them was tapioca. Tapioca starch and flour are often used to lighten allergen free foods making them taste less dense and many gluten free mixes and pre-made products use it.
Now, much happier and healthier, I want to share my journey of living gluten, casein, egg yolk, and tapioca free with you.
